INGREDIENTS:
2 cups
baby spinach leaves
1/2 cup
lightly packed parsley leaves
1/3 cup
lightly packed fresh dill
1/4 cup
walnut or olive oil
2 Tbsp
chicken or vegetable broth
4 Tbsp apple
cider vinegar
1/4 tsp
salt
8 cups
mixed salad greens
DIRECTIONS:

Combine the spinach, parsley, dill, oil, broth, vinegar, and salt in a blender or
food processor. Process, scraping the sides of the jar once or twice, until smooth
and slightly thickened.

Place the salad greens in a large bowl, drizzle the spinach mixture over the top,
and toss gently to coat.
